My friend Heidi’s husband, Brad, is a man of many talents. He is a high school English teacher, a father of six (five of whom are boys), an author, and on the side, a blacksmith. Most pertinent to this cookbook’s efforts, he is also an at-home grill master.

David and I love grilling, but once the meat is perfectly charred and ready to eat, we are never in the mood to pause and clean the grill grate. What I like about Brad’s method for grill cleaning is you can do it before you begin food preparation.

Preheat the grill for ten minutes on the highest setting. Dip a wire brush in water and scrub the grates to create a steam-clean effect. Keep the brush wet while scrubbing. Lingering bits from your last grill will become soft and lift away easily. Decrease the heat to your desired cooking temperature and wipe the grates with a paper towel dipped in oil. (An oil-coated towel will sometimes go up in flames, so it is best to switch it out with a new paper towel often, before it gets too hot).

Brad says, “Do this every time, and it will make the once-a-year deep cleaning a lot easier.”
